1 tbsp Clove (लौंग)
3 tbsp Green Cardamom (हरी इलायची)
1 tbsp Black Pepper Corn (काली मिर्च साबुत)
2 tbsp Fennel Seeds (सौंफ)
4 pieces Black Cardamom (काली इलायची)
1 piece Nutmeg (जायफल)
4 tbsp Dry Ginger Powder (सौंठ पाउडर)
🌿 Tulsi Pudina Chai Masala (तुलसी पुदीना चाय मसाला)
50 gm Regular Masala (रेगुलर मसाला)
2 gm Dry Tulsi Powder (सूखा तुलसी पाउडर)
2 gm Dry Pudina Powder (सूखा पुदीना पाउडर)
🍃 Lemon Grass Chai Masala (लेमन ग्रास चाय मसाला)
50 gm Regular Masala (रेगुलर मसाला)
3 gm Lemongrass Masala (लेमन ग्रास मसाला)
1 gm Pudina Masala (पुदीना मसाला)
👑 Rajwadi Chai Masala (राजवाड़ी चाय मसाला)
⅛ cup Green Cardamom (हरी इलायची)
¼ cup Clove (लौंग)
1 Black Cardamom (काली इलायची)
⅛ tsp Pepper Powder (काली मिर्च पाउडर)
6 Cinnamon Sticks (दालचीनी)
½ Nutmeg (जायफल)
1 Mace (जावित्री)
1 tbsp Fennel Seeds (सौंफ)
2 tsp White Pepper Powder (सफेद मिर्च पाउडर)
¼ cup Dry Rose Petals (सूखे गुलाब की पंखुड़ियाँ)
4–5 Tulsi ke Manjar (तुलसी के मंजर)
2 tbsp Ganthoda Powder (गंठोड़ा पाउडर)
¼ cup Dry Ginger Powder (सौंठ पाउडर)
18–20 Kesar Threads (केसर रेशे)
20 gm Dhage Wali Mishri (धागे वाली मिश्री)
5 gm Mulethi (मुलेठी)

🔹 Regular Chai Masala
In a pan, dry roast cinnamon sticks, cloves, green cardamom, black peppercorns, and fennel seeds on low flame.
Break open black cardamom, discard the shell, and add only the seeds to the pan.
Lightly crush nutmeg, add it, and roast for 3 to 4 minutes more.
Finally, add dry ginger powder, mix well, and switch off the flame.
Stir the mixture for a few minutes in the warm pan, then allow it to cool completely.
Grind into a fine powder and store in an airtight container.
🔹 Tulsi Pudina Chai Masala
Microwave tulsi (holy basil) leaves on a plain ceramic plate for 1 to 1.5 minutes.
Once crisp, rub with your hands to make a fine powder.
Repeat the same process with mint (pudina) leaves – microwave, dry, and rub into powder.
Mix both powders into the regular chai masala and store in an airtight container.
🔹 Lemongrass Chai Masala
Cut lemongrass into small pieces using scissors.
Microwave on a plain ceramic plate for 1 to 1.5 minutes until crisp.
Let it cool completely, then grind into a fine powder and sieve to remove coarse fibers.
Add the lemongrass powder along with tulsi and mint powders (as per shown proportions) to the regular chai masala.
Store in an airtight container for up to 1 month.
🔹 Rajwadi Chai Masala
In a pan, dry roast cardamom, cloves, black cardamom, and cinnamon stick on a low flame until aromatic.
Add crushed nutmeg and mulethi (licorice root). Stir well.
Add javitri (mace) and fennel seeds. Roast for a few more minutes on low flame.
Add tulsi manjar (holy basil buds) and a few saffron strands. Mix gently.
Add dried rose petals and dried basil leaves. Lightly roast everything together and then switch off the flame.
Finally, add mishri (rock sugar) as shown in the video. Do not roast.
Let the mixture cool completely at room temperature.
Once cooled, grind to a fine powder and store in an airtight container.
