So first of all, an outdated version of the app might be a cause so go to the App Store or play store and check if the update is available, and if there is, update the app and then try logging in.
If this fixes the problem that’s great and if it doesn’t don’t worry, I have another solution, so go to the settings and search for the App list, open it and search for the Pinterest app . Tap on it, tap on storage and now tap on the clear cache option. Once you clear the cache you can then login.
