This creamy chicken and potato bake is designed to be a hit with the whole family, especially the kids! With tender chicken, perfectly seasoned potatoes, and a rich, mild cream sauce, this dish is both comforting and easy to prepare – ideal for family dinners or gatherings.

Ingredients:
1 medium onion, thinly sliced
4 medium potatoes, peeled and thinly sliced
Salt and black pepper, to taste
2 tbsp olive oil
2 chicken breasts, cut into 1-inch cubes
1 tsp chilli powder
1 tsp garlic powder
1 tsp mixed herbs
1 tsp garam masala or curry powder (optional)
2 large eggs
200 ml heavy whipping cream
2 tbsp tomato purée (optional)
1 cup shredded cheese (e.g., cheddar or mozzarella)
1 tsp chilli flakes (optional)
Fresh tomato (optional)
Fresh parsley, chopped, for garnish

Instructions:
Prepare the Vegetables:
Preheat the oven to 390°F (200°C).
In a large baking dish, layer the sliced onions and potatoes. Drizzle with olive oil and season generously with salt and black pepper. Massage gently to coat evenly.
Season the Chicken:
In a mixing bowl, combine the cubed chicken with chilli powder, garlic powder, mixed herbs, garam masala (or curry powder), salt, and black pepper. Mix to coat the chicken evenly.
Distribute the seasoned chicken over the potatoes and onions in the baking dish.
Create the Cream Mixture:
In a separate bowl, whisk together the eggs, heavy cream, tomato purée (if using), garam masala (or curry powder), mixed herbs, garlic powder, chilli flakes (optional), and additional salt and pepper to taste.
Assemble and Bake:
Pour the cream mixture evenly over the chicken, potatoes, and onions in the baking dish.
Cover the dish and bake for 40 minutes, or until the potatoes are tender and the chicken is fully cooked.
Add Cheese and Garnish:
Remove the dish from the oven, sprinkle cheese evenly on top, and add whole cherry tomatoes / tomato slices if desired.
Return the dish to the oven, uncovered, and bake for an additional 5–10 minutes, or until the cheese is melted and bubbly.
Serve:
Garnish with freshly chopped parsley / coriander / chive before serving. Enjoy!
