Runza or Bierocks (Cabbage and burger filled buns)

Filling:

1lb ground beef
2 to 3 cups chopped cabbage
1/3 cup chopped onion
salt & pepper

Cook and crumble the burger. Add salt & pepper to taste. Add in the onion and cook a few minutes to soften, then add cabbage. Mix well and cook to soften the cabbage about 7 to 10 minutes or to your liking. Set aside and let cool.


Dough:

you can use prepared dough from the store if you wish (Rhodes brand in freezer aisle) or make your own favorite homemade bread recipe. This is the one I used today......(from 'The Complete Book of Breads by Bernard Clayton Jr, pg 39-40 Rapidmix White Bread)

5 or 6 cups all purpose flour (more as needed)
3 Tablespoons sugar
2 teaspoons salt
1 pkg dry yeast (or 2 1/2 tsp.)
*1/4 cup non-fat dry milk
*2 cups hot tap water (120-130 degrees)
3 Tablespoons shortening

(*you can use 2 cups regular milk heated to 120-130, in place of the dry powdered milk & water)

*note* by adding yeast directly to dry ingredients, it allows for using hotter liquids without harming the yeast. If you prefer to 'proof' your yeast first, then use 105-115 degrees)

Mix about half of the flour with other dry ingredients well, then add the shortening to the hot water to melt and soften a bit, then add to the flour mixture. Stir well. Start adding about 1/2 to 1 cup of flour at a time, mixing after each addition until the dough is kneadable and holds together well without being sticky. The adding and kneading may take several minutes to get it right. Cover loosely with a dry towel and set in a warm place and away from drafts for about an hour or so or until dough has raised double in size.

To make Runza's....

Pinch off a piece of dough about the size of an egg....or however big or small you want to make them. Roll out on floured surface, add a scoop of meat filling and lift and pinch edges to close. Put in an oiled baking dish and turn so the roll is lightly covered with the oil. Once your dish is full, cover and let rest atleast 15 minutes. Bake in a 350 degree oven for about an hour to hour and a half.
