Soya Chilli is a delicious Indo-Chinese dish made with soya chunks tossed in a spicy, tangy, and slightly sweet sauce. Here's a simple recipe to prepare it:

Ingredients:

Soya chunks: 1 cup

Oil: 2 tbsp

Garlic: 5-6 cloves, finely chopped

Ginger: 1 inch, finely chopped

Green chilies: 2-3, slit

Onion: 1 large, diced

Capsicum (bell pepper): 1 medium, diced

Spring onion greens: 2 tbsp, chopped (optional for garnish)


Sauce Mixture:

Soy sauce: 2 tbsp

Tomato ketchup: 2 tbsp

Red chili sauce: 1 tbsp

Vinegar: 1 tsp

Cornflour: 1 tbsp (dissolved in 3 tbsp water)

Salt: to taste

Black pepper: 1/2 tsp

Sugar: 1/2 tsp

Instructions:

1. Boil the Soya Chunks:

Boil water, add soya chunks, and cook for 5-7 minutes.

Drain, rinse with cold water, and squeeze out excess water.



2. Prepare the Sauce:

Mix soy sauce, tomato ketchup, red chili sauce, vinegar, sugar, and black pepper in a bowl.



3. Stir-Fry Vegetables:

Heat oil in a wok or pan. Add garlic, ginger, and green chilies. Sauté for a minute.

Add onions and capsicum. Stir-fry on high heat for 2-3 minutes until slightly crunchy.



4. Add Soya Chunks:

Toss the boiled soya chunks into the pan. Stir well to coat with the aromatics and vegetables.



5. Combine with Sauce:

Pour the prepared sauce over the soya chunks and mix.

Add the cornflour slurry to thicken the sauce. Stir and cook until the sauce coats everything well.



6. Garnish and Serve:

Garnish with chopped spring onion greens.

Serve hot as a starter or pair with fried rice or noodles.
