I have developed this curry recipe over a number of years. I've always wanted to be able to recreate the quality of dishes in british indian restaurants at home, and finally think I've cracked it with this smooth and creamy, coconut and coriander, mild curry dish. Serves 4-6.

Worth noting - I wasn't used to the heat this gas hob gave out, so the onions burnt a little more than I wanted them to when sealing the chicken in the frying pan, so be careful of this. I also forgot to add cinnamon and nutmeg to my mix of spices; go easy on these though - just add a little at a time as you don't want them to overpower the blend!
