Q: Can this be done in peaceful mode ?
A: Yes, the peaceful mode (and standard mode) doesn't affect the scoring calculation.
I'd highly recommended to change the game mode ASAP (default difficulty is always challenge mode which is very hard in early game)

Q: Can you make a guide on how to reach this point where you unlock stones ?
A: There are many guides out there that explained how this game mode works (I'd personally recommended OhayoHina's), but here are my insights on how to reach this point where you can just farm infinite woods for glow sticks conversion

1. change the game mode to peaceful mode so you don't have to deal with random raids
2. build and place a rice field ASAP to get infinite stamina
3. you will need to reach 'Towering pass' node in order to unlock the stones (search YT on how to beat that node, if you can't beat it then you can just give out 50 rices instead)
4. craft a machine (sawing harvester hub) to farm both woods and stones, avoid using just only operators
5. if something goes really wrong, you can reload your save to the previous checkpoint (the games autosave every 3 days)
6. upgrade your tech-tree (permanent upgrade system) for better farming efficiency

Q: haha lol no I'm not going to play RA2 for 6 hours
A: Your choice, this game mode is optional anyways. You will just miss out some rewards (and Hoshiguma exclusive RA2 skin), if you don't care about that then just ignore this game mode.

You just need to actually play it like 5-6 hours ONCE for a much better efficiency.
Clear the shop in 3 minutes (if you prepare enough woods) whenever it expands.
