I Haven't been out in a while so I needed to get in the woods. his is a lamb curry I have made a few times except I got the chance to slow cook the lamb over the fire on a spit adding a wonderful smokey flavor to it.

Recipe:
Cover the chunks of lamb in a curry paste, skewer and place over the fire to cook.

Chop 1 onion, 1 red pepper, 1 large beef tomato and a thumb sized piece of ginger in to the pan.

Lightly fry all of these until soft.

Add some curry powder or a home made blend of Indian spices. and fry this off a little.

Add some fresh yogurt and stir well.

Season with salt and pepper.

Add the cooked lamb in to the curry sauce and stir in.

serve with nan bread fresh yogurt and some lime and coriander if you have some.
