Thoushyache Mandaas is a traditional Mangalorean cake made of ground rice, coconut milk (or grated coconut) jaggery & cucumber. It is gluten free & can be vegan if you use coconut oil instead of ghee

Traditionally the mandaas is baked using a traditional method called as 'voir pondha uzo' where the pan containing the cake batter is placed over a wood fired stove and live coals are placed over the lid. This ensures that the cake receives adequate heat to bake. The cake is then slow cooked for over an hour. Since modern kitchens are restrictive, one may even steam the batter into steel plates lined with banana leaves. In this video I have baked the mandaas.

Other popular ways to make mandaas is to use red pumpkin or jackfruit instead of cucumber.
