SYRUP SOAKED SEMOLINA CAKE
INGREDIENTS
EGGS LARGE : 5
Vegetable oil : 1 cup
Desiccated coconut : 1 cup
Semolina ( suji ) : 1 cup
Sugar : 1 cup
Plain flour : 1/2 cup sift
Baking powder : 1 tsp
Cardamom powder : 1/2 tsp
Vanilla extract : 1 tsp
Almonds : chopped 2 tbsp
DECICATED COCONUT : 1 tbsp for garnishing

SUGAR SYRUP
SUGAR : 2 cups
Water : 1 cup
Lemon juice few drops

METHOD
STEP : 1
In a large bowl crack 5 eggs, add oil whisk well.
STEP : 2
Add all ingredients mix them well. Not over mix
Use spatula to mix them.
STEP : 3
Grease a pan. Transfer batter in a pan , spread chopped almonds and baked for 40-45 minutes on 170°C in preheated oven.
Or until golden from all sides. Insert clean skewer into centre of dish should remove clean.

While the cake is cooking , make the sugar syrup. In a pan add sugar and water boil for 10 minutes add few drops of lemon juice. ( rose water and cinnamon stick ) optional. For In hence the flavour.

Bring to boil and then simmer for 10 minutes.

When the cake is done and still warm pour the syrup , sprinkle some coconut on top and leave to soak for 1-2 hours. Cut into square shapes. This cake had a great taste when it is warm or at a room temperature. ENJOY ♥️
