Rum Coffee Cake Recipe☕️🥮

For the streusel and filling/ topping-

♡︎︎ 2/3 cup (135g) light of dark brown sugar
♡︎︎ 3/4 cup (95g) all-purpose flour
♡︎︎ a pinch of salt
♡︎︎ 2 teaspoons of cinnamon
♡︎︎ 7 tablespoons (85g) unsalted butter (cold and cubed

For the cake batter-

♡︎︎ 1 and 1/3 cups (166g) all-purpose flour(spooned & leveled)
♡︎︎ 1 teaspoon baking powder
♡︎︎ 1/4 teaspoon baking soda
♡︎︎ 1/4 teaspoon salt
♡︎︎ 1/2 cup (8 Tbsp; 113g) unsalted butter (room temp)
♡ 3/4 cup (150g) granulated sugar
♡︎︎ 2 large eggs, at room temperature
♡︎︎ 2 teaspoons pure vanilla extract
♡︎︎ 1/2 cup (120g) sour cream (room temp)
♡︎︎ 2 tablespoons of milk
♡︎︎ 2 tablespoons of rum (I used wray and nephew )

Glaze (optional)-

♡︎︎ ︎︎1 cup (120g) powdered sugar, sifted
♡︎︎ 1/2 teaspoon vanilla extract
♡︎︎ 2 Tablespoons (30ml) milk


Directions-

♡︎︎ Preheat oven to 350°F
♡︎︎ Line any baking pan you will like to use with parchment paper

♡︎︎ ︎︎To make the cinnamon crumb mixture

-Mix the brown sugar, flour, and cinnamon in a medium bowl.

-Incorporate the chilled butter using a pastry cutter or 2 forks leaving some larger and small pieces. (keep refrigerated

♡︎︎ For the cake
-whisk together the flour, baking powder, baking soda, and salt in a medium bowl and set aside.

-In a large bowl, use a handheld electric mixer or stand mixer with a paddle attachment, beat the butter and sugar on medium speed until creamy, about 2 minutes.

-Scrape down the sides and bottom of the bowl with a spatula as needed.

-Add the eggs and vanilla, and beat on medium-high speed until well combined.

-Then, mix in the sour cream. Scrape down the sides and bottom of the bowl with the spatula and beat again as needed to ensure everything is combined. The mixture will be lumpy.


-Pour the flour mixture to the wet ingredients, and beat on low speed until just combined.

-Finally, beat in the milk and rum. Do not overmix this batter, the batter will be thick.

-Carefully spread about half of the batter into the prepared pan. Sprinkle 1 cup (about half) of the crumb mixture evenly on top. Carefully spread the remaining batter on top

-This can be a little tricky since you’re spreading thick batter on top of crumbs , but do your best. Then sprinkle the remaining crumb mixture evenly on top.

-Bake for around 32–38 minutes or until a toothpick comes out clean from the center of the cake.

-Let cake cool in the for 10 minutes the remove and place on a wire rack for 15 minutes.

Drizzle on your glaze if desired and enjoy!!👩🏽‍🍳🤍
