Recipe:
1.4kg Free range chicken
500ml boiled water
2 limes
3 cloves garlic
2.5cm piece of turmeric
1.5 teaspoons ground coriander
1.5 teaspoons ground cumin
3-4 teaspoons korean chilli flakes
2 long fresh chilli (optional)
handful fresh coriander
20ml tamari
20ml fish sauce
1/2 teaspoon himalayan salt
1/2 teaspoon ground black pepper
Peel garlic and turmeric and place in Thermomix jug. Add all other ingredients, (removing zest from lime with peeler and removing the white pith from the lime,then add the lime to bowl).
Put lid on Thermomix and chop 6 secs/speed 6.
Put marinade into large snaplock plastic bag.
With a pair of kitchen scissors cut chicken up breastbone. Turn over and flatten. Place chicken in bag with marinade, seal bag then massage marinade into chicken. Place in fridge for 2 hours.
After 2 hours remove chicken from plastic bag and place it in the varoma dish. Measure 500ml boiled water into Thermomix jug, put lid on jug and place varoma with chicken on top.
Cook 45mins/Varoma/speed 2.5.
It's the same process in a TM31 or TM5.
After 45 mins check that juices run clear and that chicken is cooked through.
Use as required.
The remaining jus left in the Thermomix bowl can be reduced further if you wish otherwise enjoy it as a sauce with your chicken:)
If you haven't got a Thermomix you can still cook this in any steamer or it's also nice barbecued.
