The prolonged summer drought, followed by recent heavy rains seems to have almost triggered a second spring here in the south of England.

I took the opportunity to pick some lovely fresh Goosefoot and make it into the filling for a tasty stuffed pancake.

Goosefoot (Chenopodium spp) is a very easy-to-identify wild vegetable - a common 'weed of cultivation' - it's a group of very similar plants with common names such as Fat Hen, Good King Henry, Lambs Quarters, Goosefoot, Pigweed and Nickel Greens
