How to revive our starter flakes within 24 hours. Once it’s active you can begin the process of baking your first sourdough loaf at home.

IMPORTANT NOTES

Flour

We recommend feeding your starter with flour that has been milled using a whole grain wheat with some or half the bran sieve off. This gives your starter much more nutrients to be able to grow strong & quickly. We recommend mixing a 50/50 baker's white & wholegrain flour (see our flours here) as it contains more food for your , which helps feed the starter & makes it stronger.

If you are sourcing your own flour locally, we recommend choosing stoneground flour & a mix of 50/50 whole wheat & baker’s bread flour. This will provide plenty of food for your starter.


Room Temperature

Keeping your starter at the optimal temperature of 24 degrees Celsius will help it grow according to our instructions below. If your room temperature is below 21 degrees, this can significantly slow down activity, in which case it can take up to 48 hours before if will show any activity, so be patient.


METHOD

1. In a jar, stir together 50ml of lukewarm water & all of the starter flakes. Let this soak for 10 minutes to help the flakes soften before adding flour.

2. Add 40g of baker’s flour (same flour you will be using to bake your bread). We recommend using Kialla Organic Bread & Pizza flour as it contains more bran than plain flour, which helps feed the starter & makes it stronger. Mix well until there are no more dry lumps.

3. Let the jar sit in a warm room at 24 degrees Celsius for 12 hours. You should start to see some bubbles after this time.

4. Feed the starter again with 40g flour & 40g of lukewarm water. Stir well & let it sit in a warm room at 24 degrees Celsius for 12 hours. Once bubbles start forming inside your starter jar (refer to video below) the starter is now active. Begin step 2 of the bread guide.

Once you have an active starter, you can move on to step 2 of the Bread Kit Guide - Make your first sourdough bread.



TROUBLESHOOTING

Sourdough starters are extremely hard to kill. Even when you think your starter has mould or has a strong smell or layer of liquid sitting above, it can still be saved. You can do this by scraping & discarding any dry/liquid or mould like bits, then taking a tablespoon of the starter & feeding it with 40g of flour & 40g of water. Let it sit at a room temperature of 24 degrees for 12 hours. This should refresh it & it should come back to life.
