This Week's Recipe: Rainbow Fruit Salsa with Cinnamon Chips

Ingredients:

1 cup diced strawberries
1 cup diced mango
1 cup diced kiwi
1 cup diced pineapple
1 cup blueberries
1 tablespoon fresh mint, chopped
1 tablespoon honey
Juice of 1 lime
8 flour tortillas
1/4 cup melted butter
2 tablespoons cinnamon sugar
(I also added powdered sugar for easier coating)

Instructions:

In a large bowl, combine strawberries, mango, kiwi, pineapple, blueberries, mint, honey, and lime juice. Toss to combine.
Preheat oven to 350°F (175°C).
Brush tortillas with melted butter and sprinkle with cinnamon sugar. Cut into triangles.
Bake for 8-10 minutes or until crispy.
Serve the fruit salsa with cinnamon chips.
