🍋LEMON CURD RECIPE🍋
Yield: approximately 350 grams
✅Ingredients:
Zest of 1 lemon
130 grams caster sugar
110 grams lemon juice
2 eggs + 2 yolks
65 grams butter, chopped into cubes and at room temperature
✅Process:
1. Add the zest of 1 lemon into caster sugar. Massage the zest into the caster sugar to help release its natural oils, thereby flavouring the sugar with lemon. Keep aside
2. Weigh the lemon juice in a container.
3. In a bowl, whisk the eggs and yolks and keep aside.
4. In a heavy bottom saucepan, add the caster sugar and lemon juice. Turn the heat on low and cook until the sugar dissolves and the mix starts to heat up (you'll start to see the steam). Make sure you're not bringing it to a boil.
5. Gently pour this hot lemon sugar juice mix into the eggs, whisking constantly as you stir. This helps "temper" the eggs so they don't scramble.
6. Once you've added all the liquid, whisk a little and place this on a double boiler having about 1/2 an inch of simmering water. Ensure the water DOES NOT touch the base of the bowl. It is the steam from the water that very gently cooks the lemon curd.
7. Keep whisking as the lemon mix continues to heat gently and cook. Once you start to feel a slight amount of resistance, swap the whisk for a spatula and keep stirring.
8. Eventually, it will thicken up and become very glossy and velvety. Take it off the heat very carefully, don't let the steam touch your skin as this is hot.
9. Test the consistency - when you swipe a finger down the spatula containing the lemon curd, it will leave a visible trail behind and the two separating sections of lemon curd won't merge together.
10. Add cubed softened butter a little at a time, whisking well. This helps emulsify the lemon curd making it look smooth, glossy and shiny.
11. Your lemon curd now needs to cool down and chill in the refrigerator to set completely.
12. Transfer in sterilised glass jars and refrigerate overnight.
13. Your delicious zingy lemon curd (a.k.a. spoonful of sunshine) is ready to enjoy!
