1) According to studies, it is true that ancient grains were a bit higher in the trace minerals than our modern dwarf wheat

2) The SOIL ultimately matters! The more nutritious the soil is, the more nutritious your crop will be.

3) I still love the modern dwarf wheat, and I think the BIGGEST problem is the FLOUR and not the WHEAT. SO whether you love modern dwarf wheat or your ancient grains (or both like I do), make sure you're milling them yourself to get the full nutritional value that only comes from REAL whole grains.
