Duck Pancakes - First item on the menu for the new series is duck pancakes! This is a chinese take out favourite that is very easy to make yourself for a fraction of the price. For these you will want to get started early as the duck alone will take almost 4 hours cooking time (only 5 minutes of preparation though)

Once the duck has had its first cook in oil and the pancakes are cooked, you can keep these in the freezer for up to 6 months so it might be worth while to make a large batch so you only need to defrost and roast the duck for 30 minutes whenever you fancy yourself a big pile of duck pancakes.

Recipe:

Duck:

2 Duck Legs (or as many as you like)
1 tbsp chinese five spice
1 tbsp fine salt
15 black peppercorns
1 star anise
1 cinnamon stick
enough oil (or you could use duck fat) to cover, about 1 litre or 34 fl oz

Pancakes:

300g (2 cups) Strong/Bread Flour
190ml (0.8 cups / 64 fl oz) boiling water
1 tbsp salt
2 tbsp oil (for brushing)

other ingredients:
cucumber, spring onion, hoisin sauce
