Today, I’m sharing a recipe that brings back the warmth of every festive occasion—Moong Dal Halwa. Rich, aromatic, and absolutely melt-in-your-mouth delicious, this traditional dessert is a must-try!

First soak moong dal for 3 to 4 hours or overnight. Once soaked, drain extra water. Soaked moong dal will look like this

Let’s start by blending the soaked moong dal into a paste.

Now, in a heavy-bottomed pan, heat up one cup of ghee. Once the ghee is hot, add 1 tablespoon gram flour and 1 tablespoon semolina. Keep roasting till it become brown.

Now we’re going to add our moong dal paste.
This is the part that takes a little patience. You’ll need to roast the moong dal on low to medium heat, stirring constantly. This can take about 20 to 30 minutes, but you don’t want to rush it. The more time you give it, the richer the flavor."

In the mean time, lets prepare sugar syrup. Take a pan and add 1 cup sugar and 2 cups water. Add saffron and cardamom powder. Mix all well . Keep the pan on gas and let this boil.
In the mean time, Look at how the dal is changing! It’s turning a beautiful golden brown, and the ghee is starting to separate. That’s when you know it’s perfectly roasted.

"Now, it’s time to add the sugar syrup. Be careful, this can splatter a little, so keep the heat low. Stir everything well. As the liquid starts to evaporate, the halwa thickens beautifully.
Look at that shine! The halwa is done when it starts releasing ghee and pulls away from the sides of the pan. This is the perfect texture!
Add dried fruits and mix well. Then add mava . This is optional . Cook it for few minutes.

Time to serve! I love garnishing it with some chopped almonds and cashews for a bit of crunch. You can also add a few strands of saffron if you’re feeling fancy.
