Preheat the oven to 400°

Take a 4oz pork loin and cut a pocket into the side. I made a dog's dinner of my pork loin, trying to cut a pocket. I had a lot of holes. Don't worry, because it will still turn out great. Fill the pocket with as much spinach and Gouda cheese as you can fit into the pocket. Next smear the outside generously with Dijon mustard with horseradish. Then coat with bread crumbs. Bake for 35 minutes. I like to serve it with mashed potatoes.
