A classic North Indian dish! full recipe for delicious Kadi Pakoda using curd and besan:

Kadi Pakoda Recipe

For the Pakoda:

1 cup besan (gram flour)
1/2 cup curd (yogurt)
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
1/2 teaspoon garam masala powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 cup chopped cilantro (coriander leaves)
1/4 cup chopped mint leaves (optional)
Vegetable oil for frying

For the Kadi:

2 cups curd (yogurt)
1 tablespoon besan (gram flour)
1/2 teaspoon cumin seeds
1/4 teaspoon fenugreek seeds (methi seeds)
1/4 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala powder
Salt, to taste
2 tablespoons vegetable oil
Chopped cilantro (coriander leaves) for garnish

Instructions:

For the Pakoda:

1. In a large bowl, whisk together besan, curd, turmeric powder, red chili powder, garam masala powder, salt, and baking soda.
2. Add chopped cilantro and mint leaves (if using) to the bowl and mix well.
3. Gradually add water to the bowl and mix until a smooth, thick batter forms.
4. Heat oil in a deep frying pan over medium heat.
5. Using a spoon, drop small portions of the batter into the oil and fry until golden brown and crispy.
6. Remove the pakodas from the oil and drain on paper towels.

For the Kadi:

1. In a separate bowl, whisk together curd, besan, cumin seeds, fenugreek seeds, turmeric powder, red chili powder, garam masala powder, and salt.
2. Heat oil in a pan over medium heat.
3. Add the curd mixture to the pan and stir continuously until the mixture thickens and comes to a boil.
4. Reduce the heat to low and simmer the kadi for 5-7 minutes or until it reaches the desired consistency.

Assembly:

1. Add the fried pakodas to the kadi and simmer for another 2-3 minutes.
2. Garnish with chopped cilantro and serve hot with rice, roti, or paratha.

Tips and Variations:

To make the pakodas extra crispy, you can add a pinch of baking powder to the batter.
To make the kadi more flavorful, you can add a teaspoon of ginger paste or garlic paste to the curd mixture.
You can also add other spices like cumin powder, coriander powder, or amchur powder to the kadi for extra flavor.
To make the dish more substantial, you can add boiled potatoes, cauliflower, or peas to the kadi.
