Choc Cookie Dough Easter Eggs

It’s less than a week left until Easter so what a perfect time to share another cute lil recipe.

I recently shared a white choc version of these, and have made peanut butter ones before too. I can’t believe it’s taken me this long to make a chocolate version!


INGREDIENTS:
▪️1/4 cup Cacao Powder
▪️1/4 cup Protein Powder
▪️1/3 cup Rice Malt Syrup
▪️1 tbs Nut Butter

FROSTING
Pink:
▪️1/8 cup Icing Sugar
▪️1 tsp Pink Pitaya Powder
▪️2-3 tbs Water

Purple:
▪️10g White Chocolate
▪️1 tsp Black Goji Berry Powder

METHOD:
1. Mix ingredients for the eggs together until a thick dough forms.
2. Shape into eggs and set aside.
3. Mix together the ingredients for the pink and purple icings in two small separate bowls.
4. Spoon a small amount of pink frosting and spread onto bottom half of the egg.
5. Drizzle over purple icing.
6. Leave in to fridge to set.
