Ingredients for the jelly drops
Tapioca flour - 55 gr (1/3 cup - pack, level + 1 tbsp - full scoop)
Rice flour - 30 gr (4 tbsp - scoop then level)
Water - 584 ml (2 1/3 cup - fill till water flows over the edge)
Coconut cream - 60 ml (4 tbsp)
Salt - 4 gr (1/2 tsp)
Sugar - 60 gr (4 tbsp)
Pandan extract - 5 ml (1/2 tsp), ube extract, or omit extract for coconut jelly

Syrup
Water - 1 cup
Sugar - 1 cup

Coconut milk syrup
Coconut cream - 2 cups
Sugar - 1 1/2 tbsp
Salt - 1/2 tsp

Thickening solution
Rice flour - 1 1/2 Tbsp
Water - 1/3 cup

Imitation pomegranate seeds
Water chestnuts - 1 cup
Tapioca flour - 1/3 - 1/2 cup
Red food coloring - adjust to desire

Directions (drop jelly)
1. Combine tapioca flour, rice flour, salt, and sugar. Mix well, set aside.
2. Combine water, coconut cream, and pandan extract (or ube extract or leave out extract for coconut jellies). Mix well, set aside.
3. Add the dry ingredients to the wet ingredients. Mix well.
4. Run batter through a strainer.
5. Cook on low heat. Continuously stir. Increase speed and power when the mixture starts to becomes viscous. It will take between 10 - 12 minutes. It can vary depending on the heat source. See the video for consistency.
6. Remove from heat and immediately pour into the potato ricer.
7. Let it drip down into a cold, ice, water bath. Make sure you a generous amount of ice. See the video for this step.
8. Rinse in cold water a time or two

10. Store in cold water

Directions (imitation pomegranate seeds)
1. Dice water chestnuts into small cubes
2. Add red food coloring to liking
3. Coat with tapioca flour
4. Bring water to a boil then slowly add it while softly swirling it around
5. Remove from heat when all the imitation pomegranate seeds float to the top
6. Immediately transfer to an ice bath
7. Rinse with cold water
8. Store in cold water

Directions for syrup
1. Combine water, sugar, and bring to a boil
2. Reduce heat and let it simmer till syrup like

Directions for coconut milk solution
1. Combine coconut cream (cream will taste richer), sugar, salt
2. Bring to a boil on medium heat
3. Add thickening agent - a little at a time, continue whisking, add more if needed. See video for consistency.

Directions for a thickening agent
1. Combine water and rice flour into a solution

Combine imitation pomegranate seeds, jellies, syrup, coconut milk, and ice. Mix everything up and enjoy!!!
