SUMMER SALAD OVER COTTAGE CHEESE

Reading your comments genuinely give me a good laugh every day. Its completely ok to have different food tastes and preferences, but this comment got me thinking I needed to do what I could to try and give cottage cheese some of that “crunch crunch” that so many crave.

This is one of those refreshing salads that will be the star of the show. Its so easy to make, packed with so much flavor, and its SO good.

I used cottage cheese for the base, but you can also process it down to make it creamy, or even process with some feta to add a really delicious creamy, salty base.

Feel free to serve it as an appetizer, salad, or eat as a main dish.

And, if you don't like bad onion breath, this simple hack of soaking the onion in water for 15 mins does wonders!

Here is how to make it:
.
1.Start by finely dicing 1 small red onion. Add it to a bowl and cover with cold water for 15 mins, while you work the rest.

2.Finely dice 4 Persian cucumbers. Cut them in 3s or 4s strips length wise, then cut into another 3 or 4 strips, then stack them, turn them, and dice into small cubes. Reference the video, its critical these are diced small!

3.Next, grab a handful of tomatoes. I just quartered them, but you can dice them, too.

4.Finally, grab a handful of fresh dish and fresh mint and finely chop them. These add a ton of flavor, feel free to use as much or as little as you like.
5.Add diced cucumbers, tomatoes, herbs, and onions to a large salad bowl. Add the zest of a full lemon, the juice of half a lemon, 2.5 tbsp of a GOOD olive oil, 1 tbsp sumac, and a generous pinch of salt.
6.Give everything a really good mix, taste, then adjust to taste. I almost always add a bit more salt, but you do you!

7.Spread some cottage cheese on the base of a board or plate (again, you can process it, too if you don't like any clumps), top with the salad, crumble up some feta on top, then add a dusting of sumac, Aleppo pepper, and some more fresh herbs!
