Traditional Cheese Making in Transylvania

Traditional cheese making at a Romanian sheepfold from the village of Ucea de Sus, located at the foothill of Făgăraș mountains, in Brașov county. Shepherds milk the sheep at 6 pm, before making sheep cheese specialties: caș, telemea, and Romanian urda cheese. The milk is strained and whey is squeezed out. The cheese is left to dry on the cheese stand and the whey is boiled to make urda cheese, a low calories sweet cheese.
