I smoked two cornish game hens on my Kamado Joe, Big Joe III. The cook took just over an hour and I used Cherry wood to get a good smoke flavor infused into the chickens. I brined for about 4 hours before hand and glazed with Texas Pepper Jelly's rib candy about 15 or 20 min before the I took them off smoker.

All and all it was a good simple cook that was relativy fast and worked out almost exactly how I expected.

The "little fancy chickens" as one of my buddys calls them are great for events like thanksgiving if you want to do a little coming different.
