Oats and Raisin Cookies
These cookies are the best chewy cookies . Slightly crisp on the edges and chewy inside .
Recipe -
Butter (soft) - 75g
Castor sugar - 100g
Vanilla essence - 2ml
Flour - 110g
Baking powder - 1g
Baking soda - 3g
Oats - 120g
Raisins - 50g
Coconut (shredded) - 20g
Milk - As required

1. In a bowl take room temperature (soft) butter and whisk it . Add sugar in parts till the sugar dissolves in butter completely.
2. Add vanilla essence and whisk .
3. In a seperate bowl take all the dry ingredients flour , baking powder and baking soda and sift them in the mix in parts and fold it in until combined .
4 . Now add Oats , Raisins and coconut in the dough and fold it in the dough .
5 . Add milk in till it forms a dough like consistency .
6 . Preheat the oven at 160°c for 10 mins
7.Make small balls of the dough of around 40 grams each and flatten them to make a cookie shape .
8. Bake the cookies for 12-15 mins or until golden brown.
9. Take them out and let them cool down .
10. Enjoy your delicious soft cookies with tea .

Notes -
1. Take room temperature ingredients.
2. If you are adding unsalted butter then add a pinch of salt in the recipe.
3. Don't overbake the cookies after golden brown or they will be hard .
