Oh, it's good. It's real good! AND this recipe is so versatile, you could serve it several ways. Can be #lowcarb Can be made #paleo Can be made into a #freezermeal But one thing's for sure, it's an AWESOME #slowcookermeal ! Let's make some Tuscan Chicken in the slow cooker, AND as a side we make Smashed Potatoes using our electric pressure cooker, and then finishing them off in the oven for that perfect crispness.

Tuscan Chicken Recipe
3 pounds boneless skinless chicken breast or thighs
8.5 oz sundried tomatoes packed in oil and herbs, all of it
12 oz artichoke hearts (in the can or jar), quartered and drained
1 diced onion
10 (or more) cloves of garlic, pressed
1.5 tsp salt
1/2 tsp pepper
8 oz baby spinach
1 heaping tsp Basil (optional)
1 tsp oregano (optional)

Cook all except baby spinach in slow cooker on low for 6 to 8 hours or on high for 2.5 to 3.5 hours. Add time if chicken is frozen. Shorten time if chicken is cut up. Add spinach during the last 30-ish minutes.
