✨Bhapa Sandesh✨
(Steamed Sandesh cake)
Bhapa sandesh | Steamed chena sweet | Steamed paneer cake | Chena steam meetha

Steamed Sandesh is a delicious sweet dish and is very popular in West Bengal. This sandesh is very easy to prepare and requires few ingredients easily available in every kitchen. In Bengali cuisine there are varieties of sweets and most of them are milk based and are prepared from freshly prepared chenna. The texture of this sandesh is very soft, smooth and it just melts in the mouth.

Bhapa Sandesh
Ingredients :

Hot milk - 5 tbsp
Saffron strands - 10

Milk - 1.5 litre
Lemon juice - 2 tbsp + 2 tbsp water & mix or little more to curdle
Powdered sugar - 5 tbsp
Cardamom powder - 1 tsp
Saffron strands - 10
Roasted pista & almonds - 1/4 cup chopped

Steamed Sandesh cake
Soak saffron in hot milk for 20 mins
Curdle full fat milk until milk solid separates from milk
Once milk curdles, immediately strain it through a muslin cloth and clean it twice with normal water water to take out the sourness, squeeze the excess water & let it rest for 20 mins in order to avoid hard texture in chena.
Strain on a Muslin cloth. Wash it with water to take out the sourness, squeeze the excess water & let it rest for 20 mins.
Grind chena, powdered sugar, saffron milk, cardamom powder & blend in intervals till a smooth paste.powder and blitz in 2-3 sec interval enough to blend it.
Add more milk or sugar if needed
Take a 5/6 inch tin. Sprinkle saffron, pista & almonds.
Add the Chena mixture & spread evenly
Place the tin in a steamer, Cover it and steam it for 20-25 mins on medium flame till Skewer comes out clean
Remove & cool completely.
Refrigerate for 2 hours
Demould and enjoy this delicious bengali dessert
