🍯 Jalebi Recipe (Crispy & Juicy)
Ingredients:
For the batter:
1 cup all-purpose flour (maida)
2 tbsp cornflour
½ cup plain yogurt (curd)
½ tsp baking powder (or a pinch of baking soda)
Water (as needed, about ½ cup)
A pinch of turmeric or yellow/orange food color (optional)
For the sugar syrup:
1 cup sugar
½ cup water
½ tsp cardamom powder (optional)
Few saffron strands or ½ tsp rose water (optional)
½ tsp lemon juice (to prevent crystallization)
For frying:
Ghee or oil (for deep frying)

Method:
1. Prepare sugar syrup
In a pan, add sugar and water.
Heat until it reaches one-string consistency (when a drop between two fingers stretches like a thread).
Add cardamom, saffron, and lemon juice. Keep warm.
2. Make batter
Mix maida, cornflour, baking powder, and yogurt.
Add water gradually to make a smooth, thick but pourable batter.
Whisk well so it becomes slightly airy.
Rest for 30 minutes to 1 hour.
3. Shape jalebis
Pour batter into a piping bag, squeeze bottle, or zip-lock bag with a small hole.
Heat ghee/oil in a wide pan on medium heat.
Pipe the batter into hot oil in spiral or pretzel-like shapes.
4. Fry
Fry on medium flame until crisp and golden.
5. Soak
Immediately dip the hot jalebis in warm sugar syrup for 30–40 seconds.
