Process: Debone pork shoulder/butt, grind meat I like to use 3/16 grinding plate. When grinding, it's important that the meat is chilled. Add spices and use ice cold water when mixing) when you're done mixing the meat it should feel tacky at this point, I now add the garlic and high Temperature cheese.make sure to take a little portion and fry it up in case it needs more seasoning . Fresh garden Herbs used pinch of basil, oregano, and parsley. Coarse chopped
pork shoulder 80/20% fat
120g/kg of Ice Water
Kosher Salt 18g/kg
brown sugar 2g/kg (optional)
Parsley 3g/kg
Black Pepper 2g/kg
Fennel Seeds 2g/kg
Oregano 2g/kg
Basil 2g/kg
*soy protein binder 12g/kg (optional)

Ingredients for Roasted Garlic Potatoes
Italian herb and cheese sausage
3-4 potatoes
8-10 Garlic cloves
1/2 -1 dozen mushrooms
1/2 lbs Bacon
olive oil
Green Beans
Julienne Carrots
hot banana peppers for extra flavour


Pre-Heat oven 425F , saute bacon mushrooms and garlic over medium heat. place potatoes on baking sheet, sprinkle with olive oil, and add sautéed bacon, mushroom, and garlic. seasoning added oregano, basil, parsley, and salt and pepper to taste. bake 30-40 mins until crispy and tender. enjoy

Equipment used was a meat grinder, a small meat mixer, and a 15Lbs vertical sausage stuffer.
