Welcome to our kitchen! Today, we’re revealing the secret to making the perfect Medu Vada, a South Indian favorite that’s crispy on the outside and soft on the inside.
Start by soaking one cup of urad dal in water for about four to five hours. Once it’s soaked, drain the water and blend it into a smooth batter. Remember, a little water goes a long way!
Next, transfer the batter to a bowl. Add finely chopped onions, green chilies, ginger, chilli flakes,black pepper and a handful of curry leaves, fresh coriender for that authentic flavor. Don’t forget to season with salt! Mix everything well until it’s nicely combined.
Now, heat oil in a deep pan. Once hot, take a small portion of the batter and shape it into a donut. Carefully slide it into the oil. Fry until golden brown and crispy, making sure to flip them for even cooking.
Once they’re done, drain them on paper towels to remove excess oil. Serve your Medu Vadas hot with coconut chutney or sambar for the ultimate experience!
