For today's video, I'm going to show you how to make sour and spicy chicken soup. In Indonesia we call it Garang Asem.

I'm not sure where this soup is originally from, but it is famous in Kudus, a city in Central Java.

People in Indonesia cook it by chop the chicken into tiny pieces and mix with chicken gizzard and liver. Then wrap it with banana leaf and steam it for a long period until the chicken become real tender and and not much juice left inside.

I like mine with a lot of juice and since I cannot find banana leaf in stock sometimes! So this version of cooking is the easiest way without using the banana leaf. It's still taste the same and the more juice you get is quite refreshing😋

What you need:
Chicken wings/drumstick/gizzard/liver
Onion/shallots
Garlic
Tomatoes/star fruit
Chili
Tamarind
Ginger
Galangal
Bay leaf
Salt
Sugar

How to make:
Cut the chicken into small pieces. Slice the onion, garlic, chili, tomatoes and ginger.
Fry all ingredients except salt, sugar and tamarind until fragrant then add water (the amount of chicken and water is optional base on your preference)
Add salt, sugar and tamarind and stir well. Add chicken pieces and cook it until chicken tender. Then add tomatoes. At this point, you don't have to cook it longer since chicken is cooked. And ready to be serve.
I like the tomatoes not too soft.

Cara memasak di video ini adalah cara cepat tanpa menggunakan daun pisang dan dikukus.

Bumbu Garang Asem:
Ayam (bisa campur dengan hati dan ampela ayam)
Bawang merah
Bawang putih
Cabe (kalo suka pedas, kasih yang banyak)
Tomat hijau/belimbing wuluh (karena disini tidak ada, jadi di video saya menggunakan bahan yang tersedia dan mudah didapat disini)
Asam jawa
Jahe
Laos
Daun salam
Garam
Gula

Cara memasak:
Potong ayam kecil-kecil.
Iris bawang, cabe, Jahe, tomat/belimbing. Tumis di panci sampai harum. Tambahkan air menurut selera. Masukkan asam jawa, garam dan gula.
Setelah mendidih masukkan ayam dan masak sampai ayam empuk dan matang.
Masukkan tomat/belimbing, aduk rata sampai tomat setengah matang dan siap dihidangkan.

Kadang Jika saya bisa mendapatkan daun pisang, saya akan mengukus garang asem didalam panci kukusan. Caranya, tumis semua bumbu, masukkan ayam dan tumis ayam sebentar, tidak perlu sampai matang.Tidak perlu dikasih air. Lalu masukkan kedalam daun pisang, bungkus menjadi beberapa bagian dan kukus agak lama biar bumbu meresap dan ayam empuk. Lalu sajikan dengan nasi putih.
