So I've been reading THE PLANT PARADOX by Dr. Steven R Gundry, MD, Its been an eye opener and a page turner as well. All my intestinal health slowly resolving on its own, working on my hypothyroidism right now. This is my sixth video in my little lectin series. Lectins are a family of proteins found in almost all foods, especially legumes and grains. Some people claim that lectins cause increased gut permeability and drive autoimmune diseases. While it's true that certain lectins are toxic and cause harm when consumed in excess, they're easy to get rid of through cooking.The same features that lectins use to defend plants in nature may cause problems during human digestion. They resist being broken down in the gut and are stable in acidic environments, features that protect lectin-containing plants in nature.
