Step-By-Step Directions:
1. PLEASE, PLEASE remember that alcohol is flammable. NEVER EVER use vodka in a stovetop pressure cooker or anywhere near an open flame.
2. Prepare the Instant Pot by pouring 1 ½ cups of cold tap water into the inner pot. Add the metal rack.
3. Using a sharp paring knife, cut the vanilla beans in half, and then split lengthwise.
4. Add 12 half beans into each pint jar. Pour the vodka up to the lip of the jar and then loosely place the lid on the jar.
5. Place the jars on the metal rack in the inner pot and seal the lid. Set the cooking time for 30 minutes on high pressure.
6. Once the cooking time has elapsed, DO NOT do anything. Allow the pressure to release fully on its own. Once the pressure is released, open up the inner pot and allow the jars to cool fully before trying to remove them--this is CRUCIAL to keep you protected. Plan on at least 4 hours or overnight.
7. Once the jars have fully cooled, remove them from the inner pot, fully tighten the lids, and give them a good shake. Place them in a dry spot and let the vanilla extract deepen in flavor. This will take 7 days. Give the jars a shake a couple or times over the week.
8. After 7 days, if desired, transfer the vanilla extract to smaller jars. Remove the vanilla beans from the jars and place one or two beans into each smaller jar. Using a funnel, pour the vanilla extract into each jar. Add a label and ribbon if desired.
