Pain viennois was first made in Austria in the 19th century as bread in new tradition of using yeast of beer borowing instead of using the traditional sourdough natural yeast.
In richard bertinet book , dough , there is a good recipe for pain viennois and in other place he uses lavenders bloom in whole mell wheat loaf bread. So i though to compine then and make a lavender pain viennois . And substitute the suger by maple syrup.
