This is one of the Chinese style steamed fish. In this recipe, we used fermented bean paste stir fry with garlic, shallots, chilies & ginger to make the sauce. Then steam the fish together with this sauce. It's abit spicy and flavourful. Check out the recipe here:-

Steamed Tilapia with Spicy Bean Paste Recipe:-

MINCED GARLIC (12 CLOVES/60g)
MINCED SHALLOTS (60g)
MINCED GINGER (2CM)
2 RED CHILIES MINCED (DESEED)
3 THAI CHILIES MINCED (DESEED)

PREPARE SAUCE
COOKING OIL (2 TABLESPOONS)
STIR FRY GARLIC, SHALLOTS, GINGER & CHILIES TILL FRAGRANT
FERMENTED BEAN PASTE (3 TABLESPOONS)
WATER (200ml)
SOUR PLUM SAUCE (2 TABLESPOON)
SALT & SUGAR TO TASTE
FEW DASH OF WHITE PEPPER
ONCE BOILED SIMMER FOR 10 MINUTES
REMOVE AND SET ASIDE

RED TILAPIA FISH (600g BUTTERFLY CUT)
SEASON WITH RICE WINE (3 TABLESPOONS)
SALT (1 TEASPOONS)
FEW DASH OF WHITE PEPPER
SPRING ONIONS (CUT INTO 2 CM)
FEW SLICES OF GINGER
PLACE FISH ON TOP
STEAM FISH FOR 10 MINUTES
REMOVE WATER
POUR SAUCE ON TOP OF FISH
STEAM FOR ANOTHER 10 MINUTES
GARNISH WITH SPRING ONIONS & CORIANDER
SERVE HOT
