Recipe

15 pounds russet potatoes
2 - 3 dozens large eggs
2 - 3 cups sweet pickle relish or salad cubes
4 - 6 cups Dukes Mayonnaise
3 teaspoons mustard (optional)
Salt to taste


Wash potatoes, peel and slice to desired pieces. Rinse and add to a large pot, salt to taste and boil until fork tender as shown in the video. While potatoes are boiling add eggs to a pot and boil for approximately 20 minutes or so, drain and allow to cool. Once cooled, peel and chop into desired pieces or mash with a potato masher.

Drain potatoes and allow to cool for approximately 1 hour. Once cooled, mix as as shown in the video and place into the refrigerator for about one hour or longer before serving.
