Get ready to indulge in a decadent and healthy treat as we celebrate Polyphenol Day with one of my all-time favorite recipes - a delicious polyphenol-rich Chocolate cake! This cake is not only incredibly indulgent but also packed with nutrients that will leave you feeling satisfied and guilt-free. Join me in the kitchen as we whip up this mouthwatering chocolate cake to perfection. The rich chocolate flavor and the nutrient-rich ingredients will make this cake a hit with your taste buds and your body will thank you for the health benefits!

Start by preheating your oven to 350 and grease an 8-inch springform pan.
Now we’re going to combine all our dry ingredients. We’ve got:
½ Cup Allulose, Powdered
1 tsp Baking Powder (Aluminum free)
¼ tsp Iodized Salt
½ Cup Sorghum Flour
1 tsp natural, non-dutched cocoa Powder
1 Tbsp Espresso Powder
1 tsp Matcha Powder
¼ cup Pistachios, chopped

In a mixing bowl, combine all these dry ingredients and mix until all ingredients are evenly distributed.
Put that to the side while we work on our wet ingredients.
For the wet ingredients, you will need:
9 oz Melted Dark Chocolate
4 Tbsp Butter, French or Italian
2 Tbsp MCT Oil (C8 preferably)
2 Tbsp Extra Virgin Olive Oil
½ tsp Vanilla Extract
4 Eggs, Whole, Pasture Raised or Vegan Replacement like Aquafaba

Now it's time to bring this delicious cake to life - let's get baking!
Take your melted chocolate and add Butter, MCT Oil, Extra Virgin Olive Oil, and Vanilla Extract.
Whisk until combined.

After the chocolate mixture has cooled for about 5 - 10 minutes, add the eggs and whisk until incorporated.
Slowly add the dry ingredient mixture into the chocolate mixture, slowly whisking until a batter is formed.
Pour the batter into your greased pan and bake for 20 - 30 minutes or until an inserted toothpick comes out clean.
Allow the cake to cool before removing from the pan. Enjoy dusted with a powdered allulose or monk fruit sweetener.

And just like that, you’ve made a phenomenal sugar-free, lectin-light Plant Paradox-compliant chocolate cake that's packed with polyphenols!
