Today’s recipe is my Salad Series’s episode 4 - Refreshing watermelon feta salad.

Btw, who doesn’t like watermelon?

This is one of my favourite salad recipe for summers. Once summer rolls around, I can’t get enough of salads made with fresh local fruits and veggies. With feta, walnuts, mint & lime, it's the perfect mix of savory & sweet.
Every summers as soon as I see watermelon coming in the market, I rush home with the one and make this salad. Probably, this is the best recipe one can make with watermelons.

Ingredients:

1. 1 cup chilled watermelon, cut
2. 3-4 walnuts, roasted and crushed
3. Feta cheese
4. Mint leaves or rocket leaves (if available)
5. 2 big spoons of olive oil
6. 1 tsp of lemon juice
7. 1/4 tsp lemon zest
8. Salt and pepper

Make a dressing with olive oil, lemon juice, zest. Salt and pepper. And pour over watermelon, and walnuts. Add in crumbled cheese and mint leaves. And it’s done :)

Tip: if you are not having this salad immediately, and making it for later. Store watermelon and dressing in separate containers and mix it just before serving.
