How to Make Japanese Fruit Sandwich Recipe

Introducing the Japanese fruit sandwiches, or more popularly known as the fruit sando. Using slices of light and airy sponge cake instead of bread then filled with smooth and silky cream with Strawberry and Kiwi. It's so nice one piece won't be enough!

INGREDIENTS:

FOR THE SPONGE CAKE

60g Butter, melted
45ml Milk
6 Eggs, divided
180g Caster Sugar
180g Self-raising Flour
Pink Food Coloring

BAKE 150°C / 302°F
15 - 20 MINUTES, ALLOW TO COOL

FOR THE CHANTILLY CREAM

470g Double Cream
50g Caster Sugar
2 tsp Vanilla Extract
6g Gelatine Powder
2 tbsp Water

FOR THE SYRUP

100g Sugar
100g Hot Water
1 tbsp Cognac

FRUITS

I used a traybake cake tin 12" x 9". But you can use any traybake you have at home. Have fun baking. 👩‍🍳
