Researchers from the University of Education Lahore in collaboration with COMSATS University have achieved a major milestone in monitoring food quality. The team has developed a sensor to detect the freshness or spoilage of milk using natural compounds derived from Java plum. The research team has come up with a low-cost and eco-friendly solution to the complex problem of monitoring milk quality. The sensor is designed to monitor the pH level of milk. When milk is fresh, its pH is relatively neutral, and when the milk is spoiled, the color of the filter paper changes. The new sensor is capable of detecting this change in pH and indicating whether the milk is still safe for consumption or has spoiled. The use of anthocyanin, a pigment found in Java plum, is known for its vibrant color. Anthocyanin acts as a natural pH indicator. When combined with chitosan, a biopolymer extracted from shrimp shells, the anthocyanin is stabilized, allowing it to function effectively as part of the sensor. The researchers applied the combination of anthocyanin and chitosan to filter paper that was tested with milk samples. As the milk began to spoil, the filter paper, which was initially purple due to the anthocyanin, turned white, indicating a significant drop in pH. The sensor will play an important role in monitoring food quality. Traditionally, consumers rely on expiration dates to gauge the freshness of milk, but expiration dates are often vague and can be unreliable because they do not take into account factors such as storage conditions or temperature variations. On the contrary, this sensor provides a more accurate assessment of milk freshness, which will help consumers avoid the risks associated with consuming spoiled milk. The biodegradable nature of the sensor makes it an excellent alternative to current methods of detecting freshness. Most current packaging materials are not biodegradable and cause increased environmental pollution. In contrast, the milk freshness sensor, which is made of natural materials such as anthocyanin and chitosan, can safely break down in the environment without leaving harmful residues. The materials used in its manufacture are cheap and readily available, which means that the sensor can be manufactured at a low cost that will be accessible to consumers. According to the Food and Agriculture Organization (FAO), about a third of the food produced worldwide is wasted, with dairy products being the most affected. A simple and effective way to monitor milk freshness could significantly reduce the amount of milk wasted. The research team is currently seeking funding to introduce the product to the market.
