The one thing we remember about weddings even after they are over is the food! And one of the most remembered dishes of all is the Halwai Style Kaju Paneer Masala.
Kaju Paneer Masala is a rich, creamy Paneer Recipe that is especially enjoyed during the weddings.
The Kaju Paneer Masala is enriched with a cashew paste and addition of cream and yoghurt to it.
The balance of spices too creates its magic in the Kaju Paneer Masala recipe.
In the video I have also shared with you how you can ensure that the fried paneer th6at is added to the Kaju Paneer Masala stays soft and does not turn rubbery and chewy.

Recipe:

Kaju Paneer Masala
Preparation time: 20 minutes
Cooking Time: 30 minutes
Serves: 4-5

Ingredients:
400g Paneer
50 + 20 cashew nuts
2 large onions
4 large tomatoes
2” ginger
10-12 garlic cloves
4-5 green chilies
2 cinnamon sticks
2 black cardamoms
6-7 green cardamoms
1 mace
½ cup cream
1 tbsp kasuri methi
½ tsp turmeric powder
2 tbsp kashmiri red chili powder
1 tsp coriander powder
½ tsp cumin powder
½ tsp pepper powder
1 tsp garam masala powder
Salt to taste
Oil to fry

Method:
Soak 50 cashew nuts in water for 30 minutes.
Finely chop the onions.
Make a paste of the ginger, green chilies and the garlic.
Roughly chop the tomatoes and make a puree.
Blend the soaked cashew with ½ cup water to make a fine paste.
Cut the paneer into cubes.
Heat oil in a pan. Lightly fry the paneer cubes in medium hot oil till the edges are golden. Remove the fried paneer pieces to a bowl of water. Fry 20 cashew nuts and remove and set aside.
Heat 5 tbsp oil in a pan. Add the whole spices and allow to splutter. Add the chopped onions and sauté over low heat for 10-12 minutes till the onions soften and turn translucent pink. Add the ginger, garlic chili paste and sauté till they are fragrant and the onions begin to turn golden.
In a bowl, take the powdered spices and add ¼ cup water. Make a paste of the spices. Add the spice paste to the pan and sauté till the oil floats on top.
Next add in the pureed tomatoes and mix well. Cook till the oil floats on top. Add in the cashew paste, ½ cup water, mix well. Add in the paneer cubes, cream, salt to taste and mix well. Simmer over low heat for 4-5 minutes. Add, crushed kasuri methi and remove from heat.
Serve topped with fried cashew nuts.
