Serves 4 to 6

Ingredients
1 1/2 lb Potato- cooked
3 Eggs - hard boiled
2 tbsp Dill - Finely chopped
3 Green onions- thinly sliced
4 pcs Chicken bacon- Eliminate it for veggie version
10 Green olives- sliced
Sea salt and freshly ground black pepper
1/2 cup Green salad

Dressing
3 tbsp olive oil
2 tbsp cider vinegar
1 lemon juice plus zest
1 tbsp Dijon mustard

Direction

1- Place potatoes in a pot and cover with water. Add 1 tsp salt and bring to a boil. Cook potatoes until tender while still holding their shape.
2- Boil the eggs for 8 minutes.
2- Drain the potatoes and eggs and let them cool for 10 minutes. Peel them and cut each potato and eggs in three pieces.
3- Fry the chicken bacon in a frying pan. Cook the bacon low and slow. Flipping and turning to help it brown evenly. When the bacon is crisped to your liking, transfer to paper towels to drain.
4- Make the sauce by mixing all ingredients.
5- Tansfer potatoes and eggs to sauce and mix well to potatoes coat with dressing. Add other ingredients. Toss to combine. Taste and adjust salt and pepper, if needed.
6- Enjoy at room temperature.
