Amritsari Chole, or Authentic Punjabi Chole Masala Recipe, Restaurant Style Chole Masala’ (chickpeas curry) all week! 😉

INGREDIENTS
For Amritsari Chole
• 250-350 gms chickpeas (Kabuli chana).
• 1 large sized red onion paste.
• 1/2 cup tomato puree mixed with green chilli
• 1 tablespoons Garam masala powder
• Salt, as per taste
• 1 teaspoon red chili powder or per taste
• 3 tablespoons oil
• 2-3 bay leaf
• 1-2 black cardamom
• 2-3 cloves
• 1 teaspoon dried mango powder(optional)
• 2 tablespoons kasuri methi(optional)
• Ginger Garlic paste
• 2 black tea bags soaked 3-4 minutes in ½ cup steaming hot water
• 1 tablespoon coriander leaves for garnishing.

How to cook Chickpeas (Chole / Kabuli Chana):
If using dried chickpeas then follow these steps:
Rinse chickpeas 3-4 times and soak in enough water for 8-10 hours or overnight.
After 8-10 hours, drain out the excess water and rinse them again with fresh running water in the morning and set aside.
Add rinsed chickpeas to a pressure cooker along with salt, bay leaf, cardamom, garlic & black tea water. Pressure cook for 3-4 whistles.
Remove from stove and let cool down.

How to make Amritsari Chole:

Heat oil in a pan over medium heat.
Once hot, add onion & ginger garlic paste one after another.
Sauté them for few seconds or until they are fragrant & golden brown in colour.
Add tomato puree, salt, red chili powder, coriander powder, garam masala &
Mix well and cook covered for 5 minutes.
You can also add chana masala powder, dried mango powder, anardana, sugar, tamarind paste and mix well.(these are optional for more tanginess)
Add cooked chickpeas with the stock.
Cook covered for 5 -7 minutes on high flame..
Add coriander & spring onion leaves & mix well.
Amritsari chole are ready. Serve hot with Bhature or any of your flatbread.

Additional Note:- Masala chaas -
2 tblspn curd + corriander chutney blend for 1 minute in mixer.
Summer special masala chaas is ready.
