Junichi Yamaguchi, a past world champion in latte art and a top barista at a cafe in Kyoto, opened his own store "here". Even those who do not drink coffee can enjoy the unique canulés and espresso drinks brewed by the baristas that can only be found here.
Here" is located on the first floor of a hotel about a 6-minute walk from Karasuma-Oike Station on the Kyoto Municipal Subway. The entrance is a transparent door that allows you to see inside, giving you a great sense of openness.
We asked the owner, Mr. Yamaguchi, about the origin of the store's impressive name and his commitment to coffee and canele.
The origin of the store name "here
In fact, Mr. Yamaguchi was a top barista at %Arabica Kyoto, which sparked the Kyoto café boom. Here" is the café that Mr. Yamaguchi opened as an independent business.
I wanted to keep the name of the restaurant as simple as possible. I thought that the name of the restaurant would come later. Overseas, there are places that use the name of the street as it is as the name of the restaurant, and it is still very popular. So I thought it would be nice to have a simple name for the store. Also, the word "here" is easy to understand as meaning "here. I decided on this name because I wanted to make the customers feel familiar with the place, as if they were saying, 'Let's go here.
Only drinks and canulés are on the menu.
The only items on the "here" menu are espresso drinks and canele. When we asked him why he decided to offer only canelés among the many pastries on the menu, he replied, "I had a canelé when I went to Paris, and I couldn't forget it.
I couldn't forget the canele I had when I went to Paris. It was a simple canele with no decoration at all, but it had a deep flavor and left a strong impression on me. They go great with coffee. I decided to try to compete in Japan with it," says Yamaguchi.
Currently, "here" no longer serves drip coffee, partly due to the Corona crisis, and only offers espresso drinks. The drinks made with carefully selected coffee beans and milk steamed with high-level technology are exceptional.
I started in the world of coffee from latte art, and I was never very good at coffee itself, so I have been pursuing coffees that are easy for even me to drink. At "here" now, we use beans that originally have a sweet flavor in our blends, and they all have a slight sweetness to them, making them easy to drink even for those who don't like coffee. Also, the milk used in our latte can be sweetened using steam technology, so it is not uncommon to find people who first became able to enjoy espresso drinks at "here.
Indeed, the "here" latte did not have much of a bitter coffee taste and had a very refreshing aftertaste. The sweetness of the milk itself was enhanced, so even those who don't like coffee because of its bitterness can enjoy it.
They also started mail-order sales in April. In addition to canelees and coffee beans, you can also buy stylish glasses, mugs, and other "here" original items.
