INGREDIENTS :
3 cups salted jackfruit
½ cup coconut
1 onion sliced
1 tomato chopped
1 tbsp garlic chopped
1 tbsp chili powder
1 tsp coriander powder
½ tsp cumin powder
¼ tsp turmeric powder
pinch of salt
Few fresh curry leaves
1 tsp mustard seeds
2-3 garlic cloves (crushed)

METHOD :
Soak salted jackfruit in water (If too salty) for 5-10 minutes and then wash them in fresh water to remove the excess salt. Drain and keep aside.
Heat 2 tbsp oil in pan, add chopped garlic sauté for few seconds. Add sliced onion and fry until translucent . Add chopped tomato sauté until it turns soft.
Now add, chili powder, coriander , turmeric , cumin powder , pinch of salt and sauté for few seconds. Add coconut, mix well and add ½ cup water mix and simmer for 1-2 minutes on low to medium heat.
Add salted jackfruit and give a good mix . If necessary add little water, cover and cook on low heat for 5 minutes Or until it cooked.
In another pan heat 3 tbsp. of oil, add crushed garlic cloves and fer for few seconds. Add mustard seeds, once mustard seeds starts spluttering add fresh curry leaves and mix well. Turn off the heat and pour the seasoning in jackfruit sukka and give a good mix and done.
