Yes, I caught my own lobsters for this video. What do you think "from scratch" means? Being a lifelong New Englander, I take my lobster rolls seriously. There's a heavy debate around what makes the perfect lobster roll, but let me end that debate for you now. It all starts with a soft, buttery homemade roll, lightly toasted on the outside. Inside, it should be lined with a cold filling for contrast: fresh caught lobster, bits of celery for texture, a generous serving of mayonnaise, perhaps just a bit of browned butter for nutty flavor, and optional chives and lemon juice. It's simple, but can't be beat.

Homemade Rolls
2.5 cups lukewarm water
1/4 cup sugar
1 tbsp active dry yeast
6 cups all purpose flour (+ more if needed)
1/2 cup melted butter
pinch of salt
egg wash

Lobster Salad
1 lb lobster meat
1/3 cup mayonnaise
1/4 cup celery bits
2 tbsp browned butter
2 tsp lemon juice (optional)
2 tbsp chopped chives (optional)
salt and pepper
