This Recipe is my yearly ritual now which i enjoy making every Christmas. Christmas Fruit Cake made the traditional way with Rum is my all time favorite.

INGREDIENTS:
For the Dry Fruits
1/2 cup Dried Cranberries
1/2 cup Black Raisins
1/4 cup Golden Raisins or Sultanas
1/4 cup of Mixed Dry Fruits of your choice(I used 2 Dried kiwis, 2 Dates, 1 Candied Ginger, 1Tbsp Tutti Frutti)
1/2 Tsp Freshly Grated Orange zest
1 Tbsp Honey
1 Tbsp Apricot Jam (you can also use Mixed Berry Jam or any other fruit instead)
3/4 -1 Cup Dark Rum (till the berries are soaked)(you can also use Brandy/WIne instead same qty)

METHOD:
STEP 1: Lets Chop The Dry Fruits
Ensure That the Dry Fruits are washed and dried thoroughly. Any Moisture will reduce their longevityChop the Dry Fruits into small cuts. The Finer the Richer Cake Taste will be.
Transfer to a clean dry bowl devoid of any moisture. Add the Orange zest, Honey and Apricot Jam. MIx well.
STEP 2: Transfer to a Clean Glass Jar. Transfer the berries to a Clean dry Glass Bottle. Pour around 3/4-1 cup Dark Rum till the berries are soaked Well. Keep it airtight. Mix Well by shaking it. Keep It Airtight in a dark place. Avoid Sunlight. Store at room temperature until further use. Give the jar a shake every 2-3 days to ensure that the fruits are evenly soaked.

NOTES: Above Recipe is enough for a one 6/7/8 round or square or Loaf shaped cake. You can add any other homemade Grape/Orange/Cherry juice along with the Rum while soaking.
If the dry fruits look dried up then add more Rum and shake it. You can bake the fruit cake using these soaked berries either next day or after a month or two. This stays good for a year due to the presence of alcohol.The more time they are soaked the more they will become juicier.
I baked my cake after soaking the fruits for around 10days.
However if in a hurry, the fruits can be simmered on low flame in the same rum mixture for 10-15mins, add some more rum if gets dry and after switching off the flame keep it covered for around 2 hrs. They will plump up nicely and absorb all the alcohol and ready to be put in the cake same day.
