This Sniper Elite 5 game guide video shows how to unlock the Don't Hold Your Breath achievement which is awarded for making the final shot in St Nazaire without using Empty Lung. It's the final part of mission 8 (Rubble and Ruin) - the objective about destroying the Kraken for good.
Follow the path from the video and make sure to kill the sniper before he sees you. Consider saving the game before approaching the vantage point. You'll have to hit the fuel tank without activating slow-motion (Empty Lung) when using the rifle's scope. Thankfully the target is large and it's not a very long shot so you don't have to make big corrections. You can also switch to lowest difficulty level which disables advanced physics.
